Preparation
Take the casings out of the package and rinse with fresh, cool water to remove surface salt.
Cover with fresh water using approximately a 50:50 ratio of casings to water.
Thirty minutes before stuffing, change to fresh warm water. Recommended reference: 95 °F / 35 °C.
Check flexibility and integrity, then keep the casing wet during loading.
Storage
Keep unused casings refrigerated at 4 °C / 39 °F or below.
Cover fully with brine or granulated salt before storing.
Freezing may compromise the casing structure and performance.
